Jackfruit easily mirrors the texture of shredded pork, so toss in some Mexican oregano, cumin, and chili flakes, then cook with two secret ingredients, and the resemblance (in appearance and flavor) is uncanny. Serve with handmade corn tortillas, freshly-made salsa de aguacate, pico de gallo, and cilantro for a beyond-delicious vegan dish.
